Sarah, that's for places with fixed costs, like permanently employed staff wages and benefits, NYC rents, etc., in really expensive neighborhoods like the East Village, Park Slope, etc. Momofuku charges about $16. You're cheaper than Momufuku, but what are your costs?
By the way, you can get excellent ramen at a place called Tabata in Midtown for about $10.
