Went to Cochon for lunch on the opening day and it was just like the NOLA outpost. They have a pretty well oiled machine here and seem to be up and running pretty smoothly considering just opened.

Not sure where people are getting "sour cream and onion" from the Truffle Fries flavor. The unmistakable aroma of Truffle oil is easily distinguishable, and has a nice cheesy, romano flavor with a subtle Truffle flavor on the back end.

It seemed harder to do this all in 20 minutes. I don't doubt Vinny's cooking skills as I've been to Saffire many times and haven't been disappointed.

It's really hard to pick a favorite, but this year is the first year I'm planning to attend the Music and Molasses Festival and I'm hoping it will be a great one.
